Experience an evening of exceptional food, wine and storytelling as Más Vino presents a four-course Mediterranean-inspired menu celebrating the finest seasonal Western Australian produce, thoughtfully paired with the acclaimed wines of EVOI from Margaret River.
Throughout the evening, EVOI founder and winemaker Nigel Ludlow and Pan Pacific Perth Head Chef Javiera Gomez will share the stories behind each pairing, exploring the connection between provenance, craftsmanship and the people who bring every dish and wine to life.
Our chefs are finalising a refined multi‑course menu crafted exclusively for this evening, shaped by the expertise and precision that define our most memorable dining experiences. Drawing on the season’s freshest local produce, this specially curated menu celebrates technique, creativity and flavour in a way that consistently captivates our guests.

Javiera Gomez
Chef Javiera Gomez brings the warmth and soul of her Chilean heritage to every dish she creates. Inspired by the traditions of family, storytelling, and connection, her cooking reflects a deep respect for provenance and the landscapes that shape it.
Her experiences in Rapa Nui (Easter Island) and at the acclaimed restaurant Disfrutar in Spain have influenced her contemporary approach, combining sea-to-plate philosophy with refined modern techniques. At UMA, Chef Javiera celebrates the vibrant flavours of South America through the exceptional produce of Western Australia, crafting thoughtful dishes that honour tradition while embracing innovation.
Nigel Ludlow
Award-winning winemaker Nigel Ludlow is the founder of EVOI Wines, an acclaimed boutique winery in Margaret River. Since producing his first two barrels of Chardonnay in 2007, Nigel has earned a reputation for crafting elegant, terroir-driven wines that reflect the exceptional quality of one of Australia's premier wine regions. Named Western Australia's Winery of the Year in 2015 and awarded a prestigious five-star rating by James Halliday, Nigel is celebrated for his authentic approach to winemaking, combining meticulous craftsmanship with a genuine passion for provenance, sustainability and seasonality.
